Farro and integer broken Farro

Description: Farro Dicocco (Triticum Dicoccum) is one of the oldest varieties of cereals existing today, grown since the Egyptians and Romans period.  Farro is the ancestor of nowadays varieties of soft and durum wheat.

Our Farro Dicocco is originated from a variety typical of Umbrian Appennini mountains, very resistant to diseases and soil with low nutrients.
Farro is a husked cereal .  After harvest it is processed by de-husking, dressing and light stone grinding, in order to facilitate cooking, but preserving integer all original nutrients, essential oil of the germ and its fibers content.
Farro is a natural, tasty and nutrients rich ingredient of Mediterranean Diet, ideal for preparation of soups, salads and all the recipes normally used for rice.

After washing with fresh water, Farro is put in cold water and boiled for about 10 minutes in salted water. No prewetting is necessary.

  • Process of production: dehusking, stone grinding, packaging
  • Shelf life. 18 months, if packaged into inert gas bags
  • Shelf life: 6 months, if not packaged
Characteristics of the product:
  • Small and long shape grains, lightly stone ground
  • Tasty and remaining underdone after cooking
  • Cooking time: 10-15 minutes, without pre-wetting.
